Ingredients
  1. 3 pounds Beef stew meat
  2. 1 Tablespoon Manteca (bacon fat)
  3. 1 Vidalia onion, finely chopped
  4. 3 Carrots, finely chopped
  5. 3 Celery stalks, finely chopped
  6. 1/4 cup Chicken stock
  7. 3 Tablespoons Lime juice
  8. 2 Tablespoons Freshly minced garlic
  9. 2 Tablespoons Molasses
  10. 1 Tablespoon Cumin
  11. 1 Tablespoon Chili powder
  12. 2 teaspoons Oregano
  13. 1/2 teaspoon Cayenne pepper
  14. Salt and Freshly ground pepper
  15. 1 cup Brown rice
  16. 1 1/2 cups Sweet corn, frozen
Instructions
  1. Preheat oven to 350 degrees.
  2. Heat manteca in dutch oven on medium-high and fry beef until just browned. Add onion, carrot, and celery and saute until onion is translucent. Add remaining ingredients through salt and pepper.
  3. Bake, covered 1 1/2 hours or until meat is tender.
  4. While beef is cooking, prepare rice according to package instructions.
  5. Add corn to beef mixture and bake, covered another 15 minutes.
  6. Serve over rice and rejoice, for it is fucking good, man.
